What goes wrong with this form

A single "guest count" field instead of separating yourself from your plus-ones
A number field asking "how many people total" mixes the respondent with their guests in one number, making it impossible to send a follow-up to just the person who RSVP'd. A separate yes/no field plus a plus-one count keeps those two things apart.
No dietary field, then asking by email the day before
Catering needs to know who is vegetarian or has nut allergies before the party, not on the morning-of. An optional textarea field on the form gets the answer while people are already replying, not in a separate request your catering misses.
No way to track who has not replied yet
Timestamps on every response let you see who replied and who has not — the ones without a reply time are the ones you need to follow up on. Without that, you cannot tell who ignored the invite from who simply had not opened their email.

Export the responses to CSV once the form closes. You have a name for each guest, their plus-one count (add those columns), and a column of dietary restrictions. Catering numbers are a sum, not a guess, and dietary notes are all visible without reading each response one by one.
Should I ask for dietary restrictions at the party or before?
Before — on the form. Adding an optional textarea field for dietary needs gets the answer while the form is already in front of the guest, not as a follow-up email two days before the party when a caterer cannot pivot.
Can I close the form when places run out?
Yes. Set "Stop after this many responses" in Settings to your party capacity. The response that reaches that number is accepted and the next is refused, so nobody shows up to a party that was already full.
